A longtime mover and shaker in the world of Napa Valley food, wine and hospitality, Curtis di Fede oversees Silver Trident’s operations, hospitality, and product development.
A native of the Napa Valley, Curtis was inspired by a summer in Sicily to pursue a career in food. He attended Le Cordon Bleu in Paris, and then worked at various kitchens, including Heston Blumenthal’s famed The Fat Duck, as well as Bouchon and Terra here in the valley. He was chef/owner of two popular Napa eateries, Oenotri, featuring artisan pizza, and Miminashi, a Japanese Izakaya-style restaurant. He was also Executive Chef at The Charter Oak and most recently served as Operations Manager for Poe and Ultraviolet wines.
In his spare time, Curtis pursued another culinary passion and achieved certification as a Master of Olive Oil by the Organizzazione Nazionale Assaggiatori Olio Oliva, Italy’s leading training center for olive oil tasters.
Curtis has a reputation for taking exceptional care of his guests and team members, and we’re thrilled to welcome him to the Silver Trident Family.
